Plant-based fermented beverages are an important part of human history. Alcohol is a product of fermentation, preserving an elixir and creating an experience of delicious enjoyment, effervescence, creativity, and camaraderie. Consumed in small quantities and with intention, these drinks can have a powerful and positive effect on us. The plants impart their flavors as well as beneficial qualities; they give soul to the spirits.
In this edition of Garden to Glass, Vanessa Degrassi takes us on a journey of three carefully-prepared libations featuring herbs from Longue Vue: some fermented, such as mead or honey wine, some using other potent forms of extraction, such as syrup, shrub, liqueur, or tincture. Vanessa is a cook, bartender, herbalist, musician, and artist. She’ll discuss her relationship with these plants, her processes, and her love for crafting a complex palette experience. She hopes sharing her passion for plants will inspire others to start engaging with botanicals.
